Preheat and prepare

Preheat the oven to 375°F (190°C). Remove the brie from the refrigerator 15–20 minutes before baking to take the chill off and help it warm evenly.

Prepare brie for baking

If the brie is in a wooden box, remove any paper wrap but you can place the wheel back in the box (lining bottom with parchment) for baking if oven-safe. Otherwise place the wheel on a small ovenproof baking dish or sheet lined with parchment. Use a sharp knife to score a shallow crosshatch or cut a 1/4-inch slit in the top rind — this helps steam escape and allows flavorings to sink in.

Add toppings

Dot the top of the brie with 1 tablespoon unsalted butter, drizzle the tablespoon of honey evenly over the top, sprinkle the fresh thyme leaves (if using) and the coarse black pepper.

Bake

Transfer the prepared brie to the oven and bake until the cheese is soft and just starting to ooze, 12–15 minutes. Check at 10 minutes — oven times vary. The rind should remain intact but the interior should be melted.

Rest briefly

Remove the brie from the oven and let it sit 2–3 minutes to settle. If you used a wooden box, place the box on a heatproof surface. Spoon any melted butter/honey from the baking dish over the top before serving.

Accompaniments & Serving

Prepare fruit: while the brie is warming (or ahead of time), wash the grapes and trim any stems. Core the apple and slice into 1/4-inch slices or wedges. Keep slices in a little lemon water only if you need to hold them for longer than 20 minutes to prevent browning (optional).

Prepare bread and almonds: slice the baguette or loaf into 1/2-inch slices. If you prefer, lightly toast the slices on a baking sheet in the oven for 5–7 minutes at 375°F until crisp at the edges. If your almonds are not roasted, spread them on a baking sheet and toast 5–7 minutes at 350°F, watching closely until fragrant.

Plate for serving: place the warm brie on a board or shallow dish. Arrange apple slices, grapes and roasted almonds around the cheese. Place the reserved 2 tablespoons of softened butter in a small dish. Put the sliced bread nearby. Provide a small knife for spreading and a spoon for drizzling the honey/butter from the baking dish over apple slices or bread as desired.

Serve: encourage guests to tear or slice pieces of bread, spread warm brie and top with apple or grape as desired. Total hot-to-table time is best — serve immediately while cheese is warm and gooey.
