Filling
Make lemon-basil ricotta filling
In a medium bowl combine 1 cup ricotta, 2 tablespoons finely chopped basil, 1 teaspoon lemon zest, 1 teaspoon lemon juice, 2 tablespoons grated Parmesan, 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper. Stir until smooth and well combined. Taste and adjust seasoning. If mixture seems loose, chill 10–15 minutes to firm slightly for easier piping.

Prepare blossoms
Gently open each cleaned squash blossom and check inside for any petals or stamens; remove the stamen if present. If stems are long, trim to about 1 inch. Keep the blossoms on paper towels and lightly moisten with the 1/2 cup cold water only if they appear dry (this helps batter adhere). Pat dry lightly — they should be slightly damp, not wet.
Fill blossoms
Using a small spoon or a piping bag fitted with a medium tip, fill each blossom with about 1 tablespoon of the ricotta mixture (adjust to avoid overfilling). Gently twist or fold the petals closed to enclose the filling. Place filled blossoms on a plate seam-side down and refrigerate for 10 minutes to set.

Prepare batter and coatings
In a shallow bowl whisk together 3/4 cup all-purpose flour, 1/4 cup fine cornmeal (if using), 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. In a second bowl whisk 1 large lightly beaten egg with 1/2 cup cold sparkling water until combined (a few lumps are fine). Place 1/2 cup breadcrumbs or panko on a plate for a second dredge if you want extra crispness.
Coat blossoms
Working with chilled filled blossoms, lightly dust each blossom in the flour/cornmeal mixture, shaking off excess. Dip into the egg+sparkling water batter to coat completely, letting excess drip off. For a crisper finish, press coated blossom into the breadcrumbs/panko to adhere. Set coated blossoms on a wire rack while you heat the oil. Repeat until all blossoms are coated.
Frying
Heat oil
Pour 2 cups neutral oil into a heavy skillet (cast iron or stainless) to a depth of about 1/2 inch. Heat over medium-high until oil registers 350°F (175°C) on a thermometer. If you don't have a thermometer, a drop of batter should sizzle and rise steadily.
Fry blossoms
Fry blossoms in batches of 2–3 (do not overcrowd) for 1.5–2.5 minutes per side, turning gently with tongs or a slotted spoon, until golden brown and crisp. Total fry time will be about 3–5 minutes per blossom depending on size. Internal filling should be warm. If oil temperature drops, raise heat slightly; maintain ~325–350°F during frying.
Drain
Transfer fried blossoms to a paper-towel-lined baking sheet or wire rack set over a sheet pan. Sprinkle lightly with fine sea salt or flaky finishing salt while hot. Keep warm in a low oven (200°F / 95°C) if frying multiple batches.
Aleppo pepper honey drizzle
Make drizzle
In a small bowl whisk together 3 tablespoons mild honey, 1 teaspoon lemon juice, 3/4 teaspoon Aleppo pepper, and 1/8 teaspoon salt. If the honey is very thick, whisk in up to 1 teaspoon warm water to loosen to a drizzle consistency. Taste and adjust for heat or acidity.
Finish and plate
Arrange two fried squash blossoms per order on a serving plate. Lightly drizzle each order with about 1/2 to 1 tablespoon of the Aleppo pepper honey (use more or less to taste). Garnish with microgreens or small basil leaves if desired. Serve immediately while hot and crisp.
