Method

Prepare fruit purée

Place 1/2 cup fresh raspberries and 1 teaspoon sugar (or 1 tsp simple syrup) into a small bowl or mortar. Using a fork or muddler, mash the berries until they release juice and form a coarse purée (about 20–30 seconds). If you prefer a smoother texture, press the purée through a fine-mesh sieve into a small cup to remove seeds.

Combine and mix

Add 2 tablespoons fresh lime juice to the raspberry purée and stir to combine. Taste and adjust sweetness by adding a little more sugar or syrup if desired.

Assemble drink

Fill a tall glass with 1 cup ice cubes. Spoon the raspberry–lime mixture over the ice. Slowly pour 12 oz chilled sparkling water over the fruit mixture to preserve carbonation. Gently stir once with a bar spoon to distribute fruit but avoid vigorous stirring which will flatten the bubbles.

Garnish & serve

Garnish with a lime wheel or wedge on the rim. Serve immediately with a straw or stirrer.

Prepare fruit purée

Place 1/2 cup fresh blackberries and 1 teaspoon sugar (or 1 tsp simple syrup) into a small bowl. Mash with a fork or muddler until they break down and produce a juicy purée (20–30 seconds). Optional: press through a fine sieve to remove seeds for a smoother drink.

Add citrus

Stir 1 tablespoon fresh lemon juice into the blackberry purée and taste. Add a touch more sweetener if needed to balance the tartness.

Assemble drink

Place 1 cup ice in a glass. Spoon the blackberry–lemon mixture over the ice, then slowly pour 12 oz chilled sparkling water over the fruit. Gently stir once to combine without losing too much carbonation.

Garnish & serve

Garnish with a lemon slice or a blackberry on a pick. Serve immediately to keep the drink fizzy.

Grapefruit Spindrift (Sparkling Fruit Water)

Prepare fruit

Section or chop 1/2 cup fresh pink or ruby grapefruit segments and combine with 1 teaspoon honey or agave if using. Lightly muddle the segments in a bowl to release juice. For a smoother texture and less pulp, squeeze the segments through a sieve to collect 2 tablespoons fresh grapefruit juice and discard solids.

Combine flavors

If you used whole segments, stir the optional sweetener into the muddled fruit. If you used strained juice, mix the 2 tablespoons juice with the sweetener until dissolved.

Assemble drink

Fill a glass with 1 cup ice. Add the grapefruit mixture, then slowly pour 12 oz chilled sparkling water over the top. Stir gently once to combine.

Garnish with a grapefruit wedge or twist. Serve immediately to preserve effervescence.
