Prepare the Chicken

In a pot, boil the chicken breasts in salted water until fully cooked. Remove, let cool, and shred the chicken into small pieces.

Make the Sauce

In a large skillet, heat olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent. Add the aji amarillo paste and cook for another 2-3 minutes.

Combine Ingredients

Add the shredded chicken, chopped walnuts, and grated Parmesan cheese to the skillet. Pour in the evaporated milk and mix well. Season with salt and black pepper. Simmer for about 10 minutes until the sauce thickens.

Serve

On a plate, arrange the boiled and sliced potatoes. Spoon the aji de gallina sauce over the potatoes. Garnish with sliced hard-boiled eggs and olives.
