Prepare the Rice

Cook the white rice according to package instructions. Keep warm.

Cook the Fries

Prepare the French fries according to your preferred method (frying or baking). Keep warm.

Sauté the Vegetables

In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add sliced red onion and minced garlic, sauté until the onion is translucent.

Add the Steak

Add the pepper steak strips to the skillet, season with salt and black pepper, and cook until browned.

Combine Ingredients

Stir in diced tomatoes, soy sauce, red wine vinegar, and aji amarillo paste. Cook for an additional 3-5 minutes until the tomatoes soften.

Finish and Serve

Remove from heat, sprinkle fresh cilantro on top. Serve the lomo saltado over a bed of French fries with a side of white rice.
