Cook the Rice

Rinse the white rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is fully cooked and water is absorbed. Fluff with a fork and set aside.

Prepare the French Fries

Cook the French fries according to package instructions until they are golden brown and crispy. Set aside.

Cook the Chicken and Vegetables

In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.

Add Vegetables

Add the sliced onion, green bell pepper, and tomato to the skillet. Stir-fry for about 3-4 minutes until the vegetables are slightly tender.

Add Seasoning

Pour in the soy sauce and vinegar, and season with salt and black pepper to taste. Stir everything together and cook for an additional 2 minutes.

Serve

On a plate, serve a portion of the white rice next to the Pollo Saltado mixture. Top with the cooked French fries and enjoy!
