Chill glass

Place a coupe or chilled cocktail glass in the freezer or fill it with ice water to chill while you prepare the cocktail.

Measure and combine

Add 1 oz Appleton 15, 0.5 oz R.L. Seale's 12, 0.75 oz fresh lime juice, and 0.5 oz demerara syrup into a cocktail shaker.

Add ice and shake

Fill the shaker with roughly 1 cup of ice. Put the lid on and shake vigorously for 10–15 seconds, until the exterior of the shaker is very cold and a good froth forms from the citrus.

Prepare glass

If you chilled the glass with ice water, dump the ice water out now.

Double strain and serve

Double-strain the cocktail into the chilled coupe using a Hawthorne and a fine-mesh strainer to remove ice shards and any pulp for a silky texture.

Garnish

Express a lime peel over the drink or place a lime wheel on the rim as a garnish. Serve immediately.
