Preheat and steep chamomile

Bring 4 cups of water almost to a boil (about 95°C / 203°F). Place 3 tablespoons of dried chamomile flowers in a heatproof teapot or large infuser. Pour the hot water over the chamomile, cover, and steep for 6–8 minutes to extract a full floral body without bitterness. While steeping, proceed with the fruit preparation.

After steeping, strain the tea into a heatproof pitcher, discarding the spent chamomile flowers. Keep the brewed tea warm if serving immediately, or allow to cool slightly if you plan to serve lukewarm or chilled.

Prepare apple and zest

Peel the apple and remove the core. Thinly slice half the apple into rounds for garnish and dice the other half into small 1/4-inch pieces. Finely grate the orange zest (about 1 tablespoon) and set aside.

Infuse with apple and orange blossom water

Add the diced apple pieces and 1 tablespoon of orange zest to the warm chamomile in the pitcher. Add 1 teaspoon of orange blossom water (start with 1/2 tsp if you prefer a subtler floral note). Stir gently to combine. Allow the mixture to steep together for 5 minutes so the apple releases fresh, sweet notes and the orange blossom water melds with the chamomile.

Finish and balance

Taste the infused tea. Add 2 teaspoons of honey, 1 teaspoon of fresh lemon juice, and a pinch of sea salt. Stir until the honey dissolves. The lemon brightens the flavors and the pinch of salt enhances the apple and floral notes. Adjust honey or lemon to taste — add up to 1 additional teaspoon honey for more sweetness or up to 1/2 teaspoon more lemon for extra brightness.

Assemble & Serve

Strain the tea into cups through a fine mesh strainer to remove diced apple and zest (optional: leave a few diced apple pieces in the pitcher for texture). If serving hot, pour immediately into warmed cups. If serving chilled, let the tea cool to room temperature, transfer to the refrigerator and chill for at least 30 minutes, then serve over ice.

Garnish each cup with a thin apple slice, a small edible flower or a few dried chamomile blossoms. Serve with an optional extra drizzle of honey on the side and an extra pinch of orange zest on top for aroma.
