Brew White Peony
Bring 12 oz (360 ml) water to 175–185°F (just below boiling). Place 3 tsp white peony loose leaf tea in a teapot or infuser. Pour the 12 oz hot water over the leaves and steep for 3 minutes for a smooth, honeyed profile. After steeping, strain the tea into a heatproof container and set aside to cool slightly (about 5 minutes).
Sweeten and Acidify
While the tea is still warm (not hot), stir in 1 tablespoon honey syrup until fully dissolved, then add 1/2 tablespoon fresh lemon juice and stir. Taste and adjust: it should be gently honeyed with a bright edge from the lemon.
Herb & Roast Notes
Prepare Herb Infusion
In a separate small heatproof cup, pour 4 oz (120 ml) hot water (175–185°F) over 1/4 tsp dried rosemary, 1/4 tsp dried lavender, and half a small bay leaf. Steep 4 minutes to extract aromatic, roasted-herb notes. If using the optional lightly toasted oak chips or charred cedar, briefly rinse them with the hot water and then steep alongside the herbs for a subtler woodsy aroma.
Strain and Combine
Strain the herb infusion through a fine mesh into the brewed white peony tea. Stir to integrate the herb-roast layer. Taste and if the woodsy/herbal flavor is too forward, dilute with 1–2 tablespoons of cooled brewed tea or water.
Serve & Garnish
Fill a serving glass with 1 cup of ice. Pour the combined white peony and herb infusion over the ice. Garnish with a lemon wheel and a sprig of fresh rosemary. Optionally, gently clap the rosemary between your palms before garnishing to release extra aroma.
Serve immediately while aromatic. Yields a smooth, honeyed tea with woodsy, roasted herb notes. Adjust sweetness or acidity to taste.
