Scrambled Eggs

Prepare the Eggs

In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Cook the Eggs

Melt butter in a skillet over medium heat. Pour in the egg mixture and stir gently until the eggs are cooked to your liking.

Prepare the Potatoes

Dice the potatoes, onion, and bell pepper.

Cook the Home Fries

Heat olive oil in a skillet over medium heat. Add the potatoes and cook until golden brown, about 10-15 minutes. Stir in onion and bell pepper, season with salt and pepper, and cook until softened.

Prepare the Mixture

In a bowl, whisk together eggs, milk, vanilla, cinnamon, nutmeg, and brown sugar.

Assemble and Bake

Layer the bread slices in a greased baking dish and pour the egg mixture over them. Cover and refrigerate for at least 1 hour or overnight. Bake at 350°F (175°C) for 30-40 minutes.
