Preparation
Make the Soda Base
In a glass, combine the fresh lime juice and simple syrup. Add the fresh mint leaves and muddle gently to release the mint's aroma.
Combine Ingredients
Pour in the Cowichan gin or vodka and then add the sparkling water. Stir gently to combine.
Garnish and Serve
Garnish with additional mint leaves or a lime wedge if desired. Serve immediately over ice.
