Caramelize Broccoli

In a pan, heat olive oil over medium heat. Add broccoli florets, salt, and pepper. Cook until the broccoli is tender and caramelized, about 8-10 minutes. Mash the broccoli slightly with a fork and set aside.

Prepare the Tuna

In a bowl, combine the cold smoked albacore tuna with salt and pepper to taste. Mix in the smoked tonnato sauce until well blended.

Assemble the Sandwich

On two slices of sourdough bread, layer the caramelized broccoli smash, followed by the tuna mixture. Top with shredded cheddar cheese and place the remaining slices of bread on top.

Grill the Sandwich

In a skillet over medium heat, grill the sandwiches until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

Serve

Remove from heat, sprinkle sesame seeds on top, slice in half, and serve warm.
