1. Prepare the Spinach
Wash the fresh spinach thoroughly and remove any tough stems. In a large pot of boiling salted water, blanch the spinach for about 2 minutes, then drain and immediately plunge it into ice water to stop the cooking. Once cooled, drain again and chop roughly.
2. Cook the Garlic
In a medium skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
3. Create the Cream Sauce
Pour in the heavy cream, and stir in the chopped spinach. Cook for about 5 minutes, allowing the flavors to meld and the cream to thicken slightly.
4. Season the Spinach
Add nutmeg, salt, and black pepper to taste. If using, stir in the grated Parmesan cheese until melted and well combined.
5. Serve
Remove from heat and serve warm as a delicious side dish.
