Preparation

Chill and prepare

Place a serving platter in the refrigerator or freezer for 10–15 minutes to get it cold. Chill the bowl containing the crème fraîche as well. Keep the caviar chilled in the coldest part of your refrigerator and do not let it freeze.

Prepare oysters

Rinse the oyster shells under cold running water to remove any grit. Using an oyster knife and a towel to stabilize each oyster, carefully shuck each oyster: insert the knife at the hinge, twist to pop, run the blade along the top shell to sever the muscle, remove the top shell, and then slide the blade under the oyster meat to free it from the bottom shell, taking care to retain as much of the oyster liquor (brine) as possible.

Arrange on bed

Fill a wide serving platter with crushed ice (or rock salt) and a layer of damp seaweed or coarse salt to stabilize shells. Nestle the shucked oysters on the half shell into the ice so they sit level and don’t tip.

Portion crème fraîche

Using a small spoon, place about 1/4 teaspoon (roughly 0.5–0.75 tbs distributed among oysters equals the 3 tbs total) of chilled crème fraîche onto the center of each oyster. The crème fraîche should be chilled and slightly thick so it sits atop the oyster without running.

Add caviar

Using a mother-of-pearl or non-metallic spoon (metal can affect caviar flavor), carefully place about 1/8–1/4 teaspoon (approximately 1/12 to 1/8 of the total 1.5 tbs; roughly 0.125 tbs per oyster) of caviar on top of the crème fraîche on each oyster. Aim for a small, elegant mound rather than a heavy layer — the caviar should complement, not overwhelm, the oyster.

Garnish

Lightly scatter a few finely snipped chives (about a pinch — total 1 tablespoon divided across oysters) across the caviar-topped oysters. Finish with a very light dusting of freshly cracked black pepper (a small crack over 3–4 oysters at a time). Do not squeeze lemon directly on the caviar-topped oysters unless the diner requests acidity; serve lemon wedges on the side.

Service & Notes

Serve immediately while oysters are cold and caviar is chilled. Provide small tasting spoons for diners to scoop the oysters with topping in one bite. If desired, offer extra crème fraîche and additional caviar on the side (keep refrigerated until just before serving). Leftover opened oysters should be consumed the same day. Caviar should be returned to cold storage promptly after service.

Flavor balance tips: Use minimal lemon and pepper so as not to mask oyster and caviar flavors. Very good quality oyster and high-grade caviar require only the lightest accompaniment.
