Method
Crab Base
Prepare cream cheese
Remove the cream cheese from the refrigerator at least 30 minutes before mixing so it is softened. If short on time, microwave the block for 8–10 seconds to loosen (do not melt).
Beat base
In a medium mixing bowl, using a hand mixer or whisk, beat the softened cream cheese until smooth. Add the sour cream and mayonnaise and beat on medium speed until fully combined and silky, about 1–2 minutes.
Fold crab meat
Gently fold the lump blue crab meat into the cream mixture with a rubber spatula, taking care to keep larger lumps intact. Do not overmix to preserve texture.
Seasonings & Aromatics
Mix seasonings
To the bowl with the crab and cream base, add 2 tablespoons lemon juice, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon hot sauce, 1 teaspoon Old Bay, 1 teaspoon granulated garlic, 1 teaspoon fine sea salt, and 1 teaspoon freshly ground black pepper. Stir gently but thoroughly to distribute seasonings evenly.
Incorporate vegetables & herbs
Fold in the finely diced red bell pepper, diced celery, sliced green onions, and 2 tablespoons chopped parsley until evenly dispersed throughout the dip.
Finish & Chill
Adjust seasoning
Taste the dip and adjust seasoning as needed. If you want more brightness, add up to 1 teaspoon extra lemon juice. Add more salt, pepper or hot sauce to your preference.
Add finishing oil
Drizzle 1 teaspoon olive oil over the top and fold once to incorporate for a silkier mouthfeel.
Chill
Cover the bowl tightly with plastic wrap or transfer to an airtight container. Chill in the refrigerator for at least 1 hour, preferably 2–4 hours, to let flavors meld. The dip can be made up to 24 hours ahead; bring to serving temperature (slightly cooler than room temperature) straight from fridge.
Serve
Garnish and plate
Before serving, stir gently, then transfer to a shallow serving bowl. Sprinkle 1/4 teaspoon smoked paprika and 1 tablespoon chopped chives or parsley over the top. Arrange crackers or toasted baguette slices around the bowl and place lemon wedges on the side.
Serving suggestion
Serve chilled with crackers or toast. Recommend a squeeze of lemon over individual portions for added brightness.
