Prepare graham crumb
Place graham cracker sheets in a resealable bag and crush to coarse crumbs with a rolling pin or pulse in a food processor until you have a mix of fine crumbs and small pieces. Combine with melted butter and a pinch of salt (about 1/16 tsp) to create slightly clumped, sandy crumbs. Set aside.
Honey Brûléed Fluff
Make honey marshmallow fluff
In a clean, grease-free mixing bowl, combine the pasteurized egg whites (or aquafaba) and granulated sugar. Using an electric mixer on medium-high speed, whip until soft peaks form and the mixture looks glossy (about 2–3 minutes). With the mixer running, slowly pour in the honey and continue whipping until medium-stiff peaks form and the mixture has cooled slightly (another 2–3 minutes). Add vanilla and whip briefly to combine. Taste and adjust honey if you want it sweeter.
Portion and brûlée
Spoon or pipe dollops (about 1–2 tbsp each) of the honey fluff onto a baking sheet lined with parchment or directly onto the serving vessels. Lightly sprinkle each dollop with the fine sugar. Using a kitchen blowtorch, carefully brûlée the top of each fluff dollop until the sugar melts and browns to a thin caramel crust (about 10–20 seconds per dollop). If you don't have a torch, you can place the dollops under a very hot broiler for 30–60 seconds, watching closely to avoid burning. Allow the caramelized tops to cool and harden for 1–2 minutes.
Base & Assembly
Prepare whipped base
Whip the heavy cream with the salt to soft peaks (stop before stiff peaks). Fold about one-third of the prepared honey fluff into the whipped cream gently to marble and sweeten the base without deflating it. Reserve remaining fluff for topping.
Assemble SM'OYSTER
If serving in small shallow dishes or half-sphere molds (to mimic an 'oyster' shell), spread a thin layer (about 2–3 tbsp) of the whipped cream-honey mixture as the base. Sprinkle a light layer of graham breadcrumb mixture (about 1 tsp) over the base. Place one brûléed honey fluff dollop on top. Generously crown with shaved milk chocolate (about 1 tbsp) so the curls rest on and around the fluff. Finish with a few more graham crumbs and a light dusting of cocoa powder if desired.
Serve immediately so the chocolate shavings maintain texture and the brûléed top provides contrast. If making ahead, keep components separately chilled: whipped base and crumbs refrigerated, shavings chilled, and brûléed fluff prepared just before serving.
