Slice and oil

Preheat oven to 425°F (220°C). Slice the ciabatta or baguette into 12-16 slices about 1/2-inch thick. Brush both sides lightly with the 3 tbs extra-virgin olive oil and place on a baking sheet in a single layer.

Bake until golden

Toast in the preheated oven 6–8 minutes, flip once halfway through, until both sides are golden and crisp at the edges. Remove from oven and while still warm, rub the cut side of the halved garlic cloves over each slice for a subtle garlic flavor. Season lightly with 1/2 tsp sea salt and 1/4 tsp black pepper. Set aside to cool slightly.

Balsamic Tomatoes

Make tomato mixture

In a medium bowl combine the halved tomatoes and the finely minced shallot. Add 2 tbs balsamic vinegar, 1 tbs extra-virgin olive oil, 1 tsp honey or maple syrup, 1/4 cup chopped basil, 1/2 tsp sea salt and 1/4 tsp freshly ground black pepper. Stir gently to combine. Taste and adjust seasoning; the mixture should be bright, slightly sweet, and balanced with the vinegar.

Let marinate

Allow the tomato mixture to sit at room temperature for 10–15 minutes to macerate so the balsamic and shallot soften the tomatoes and develop flavor. Stir again just before assembling.

Goat Cheese & Pesto

Soften and blend

In a small bowl, crumble the 6 oz goat cheese. If the cheese is very firm, add 1 tsp heavy cream or milk and stir to a spreadable consistency. Fold in or swirl 4 tsp basil pesto into the goat cheese — you want marbled flavor, not full homogenization, so leave some white and green streaks. Taste and adjust for salt (goat cheese is often salty enough).

Spread on toasts

When the bread slices are warm, spread about 1 heaping tbs of the goat cheese–pesto mixture on each slice, leaving the edges visible for texture contrast.

Assembly & Finish

Top with tomatoes

Spoon 1 to 2 tbs of the balsamic tomato mixture onto each cheese-covered toast, distributing tomatoes and some of their dressing so every bite has both tomato and vinaigrette. Gently press a small basil leaf on top of each bruschetta piece to adhere.

Garnish and glaze

Drizzle about 2 tbs balsamic glaze evenly over the assembled toasts (approximately 1/4 tsp to 1/2 tsp per piece, depending on number of slices). Scatter microgreens or a small arugula leaf if using, and finish with a light sprinkle of flaky sea salt (about a pinch total) and an extra crack of black pepper if desired.

Serve

Arrange bruschetta on a platter and serve immediately so the bread remains crisp. Leftovers: store tomato mixture separately in the refrigerator up to 2 days and assemble just before serving to keep toasts crisp.
