Cook the Bucatini

Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water before draining.

Cook the Bacon

In a large skillet over medium heat, add the bacon lardons. Cook until crispy, about 5-7 minutes. Remove the bacon from the pan and set aside, leaving the rendered fat in the skillet.

Sauté the Mushrooms

In the same skillet, add the wild beech mushrooms to the bacon fat. Sauté for about 4-5 minutes until they are golden and tender. Remove from heat and set aside.

Prepare the Sauce

In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

Combine Pasta and Sauce

Add the drained bucatini to the skillet with the sautéed mushrooms. Stir to combine, then remove the skillet from heat. Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. Add reserved pasta water as needed to achieve desired consistency.

Serve immediately, topped with the crispy bacon lardons and additional grated Parmesan cheese and black pepper to taste.
