Preparation of Seafood

Prepare the Seafood

Rinse the shrimp, calamari, and clams under cold running water. Pat dry with paper towels and set aside.

Mix the Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

Add the Sparkling Water

Gradually add the cold sparkling water to the dry ingredients, whisking until smooth. The batter should be light and airy.

Frying

Heat the Oil

In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Seafood

Dip the shrimp, calamari, and clams into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes.

Drain the Fried Seafood

Remove the fried seafood with a slotted spoon and drain on a plate lined with paper towels.

Plate the Fritto Misto

Arrange the fried seafood on a serving platter. Garnish with fresh watercress and serve with lemon wedges on the side.
