Beef Tenderloin

Preheat and Prepare

Preheat your oven to 400°F (200°C).

Season the Tenderloin

Rub the beef tenderloin with olive oil, sprinkle with sea salt, black pepper, and fresh rosemary.

Sear the Tenderloin

Heat a skillet over medium-high heat and sear the tenderloin for about 4-5 minutes on each side until browned.

Roast in Oven

Transfer the seared tenderloin to the oven and roast for about 20-25 minutes (or until desired doneness). Let it rest for 10 minutes before slicing.

Garlic Prawns

Prep the Prawns

Peel and devein the prawns, leaving the tails on for presentation.

Cook the Garlic

In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).

Sauté the Prawns

Add the prawns to the skillet and cook for about 2-3 minutes on each side until they turn pink. Add lemon juice and chopped parsley just before removing from heat.

Lobster Reduction

Sauté Shallots

In a saucepan, melt 2 tablespoons of butter over medium heat. Add finely chopped shallots and sauté until translucent.

Add Liquids

Pour in the lobster stock and white wine, and bring to a simmer. Cook until reduced by half.

Finish the Sauce

Stir in heavy cream and continue to simmer until the sauce thickens. Season with salt and pepper to taste.
