Prepare the Shrimp

In a mixing bowl, combine the shrimp with olive oil, salt, and black pepper. Toss until the shrimp are evenly coated.

Cook the Shrimp

Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and set aside.

Candied Fresno Chili

Prepare the Syrup

In a small saucepan, combine sugar and water. Heat over medium heat, stirring until the sugar dissolves completely.

Candy the Chilis

Slice the Fresno chilis lengthwise and remove seeds. Add the chilis to the sugar syrup. Simmer for about 15-20 minutes until the chilis become tender and the syrup thickens. Remove from heat and let cool.

Avocado Foam

Blend the Avocado

In a blender, combine ripe avocados, lime juice, heavy cream, and salt. Blend until smooth and creamy.

Create Foam

Using an immersion blender, froth the avocado mixture until it becomes light and airy. Set aside.

Plating

Assemble the Dish

On a serving plate, place a generous dollop of avocado foam in the center. Arrange the cooked shrimp around the foam, and drizzle with the candied Fresno chili syrup.

Garnish

Finish with a sprinkle of micro cilantro on top for a fresh touch.
