Prepare the Quince

In a small saucepan, add the diced quince and cover it with water. Bring it to a boil over medium heat, then reduce the heat and let it simmer until the quince is tender, about 10 minutes.

Prepare the Base

Once the quince is tender, drain the water and set the quince aside to cool slightly. In a mixing glass, combine the Calvados, Madeira wine, and freshly squeezed lemon juice. Stir well to combine.

Combine Ingredients

In a mixing bowl, combine the toasted barley, cooked quince, and chopped sage leaves. Pour the Calvados mixture over the barley and fruit mixture, stirring gently to coat everything evenly.

Serve

Let the mixture sit for about 5 minutes to allow the flavors to meld. Serve in a small bowl or as a topping on toasted bread.
