Brew the tea

Bring 500 ml water to a near boil. Pour over 2 tsp white tea leaves in a heatproof teapot or pitcher. Steep for 3–4 minutes for white tea (2–3 minutes if using a mild black tea) to keep the flavor delicate. Strain leaves and let the brewed tea cool to warm (about 10–15 minutes).

Sweeten and flavor

While the tea is still slightly warm, stir in 2 tablespoons honey or simple syrup and 1 tablespoon fresh lemon juice until dissolved. Taste and adjust sweetness — the peach nectar will add sweetness, so keep it balanced.

Combine with peach

Once the tea has cooled to room temperature (or chilled briefly in the refrigerator for 15–20 minutes), pour the 120 ml peach nectar or peach purée into the tea and stir until fully incorporated. If using thick purée, whisk briefly to combine and smooth any lumps.

Finish with sparkle

Add 240 ml chilled sparkling water or club soda to the peach-tea mixture and gently stir once to combine. Add 1 cup of ice cubes to chill the drink (or serve the tea over ice in individual glasses if preferred).

Pour the Bellini Tea into two tall glasses filled with ice. Divide the drink evenly between glasses. Float 1 fresh peach slice on each glass and tuck 2 mint leaves beside the slice for aroma and presentation.

Serve immediately with a straw or stirrer. If making ahead, keep the brewed tea-peach mixture chilled without sparkling water; add soda just before serving to retain fizz.
