Combine syrups and cream

In a small measuring cup or mixing glass, combine the vanilla syrup and the flavored syrup of your choice. Add the heavy cream and half-and-half. Stir briskly for 10–15 seconds until the mixture is homogeneous and slightly frothy. This creates the creamy flavored base for the soda.

Taste the base. If you prefer a sweeter or stronger flavor, add an additional 1/2 tablespoon of flavored syrup or 1/2 tablespoon vanilla syrup and stir again. Remember that the club soda will dilute sweetness slightly.

Prepare glass

Fill a tall glass (12–16 oz) with the cup of ice. Chilling the glass with ice helps keep the soda fizzy longer.

Add syrup mixture

Pour the prepared syrup-and-cream mixture over the ice, distributing it evenly in the glass.

Add club soda

Slowly pour 8 oz (about 1 cup) of very cold club soda down the side of the glass to preserve carbonation. Pour in two stages, pausing briefly, to avoid overflowing and to get a gentle froth on top.

Finish and serve

Give the drink one gentle stir with a long spoon or straw (2–3 slow turns) to combine the soda and cream mixture without flattening the carbonation. Top with a maraschino cherry and/or a mint sprig if desired. Serve immediately with a straw.
