Rinse the Rice

Place the long grain rice in a large colander and rinse under cold running water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

Boil the Water

In a large pot, bring 20 cups of water to a rolling boil over high heat. Make sure the pot is large enough to accommodate the rice without overflowing.

Add Salt and Rice

Once the water is boiling, add 2 tablespoons of salt to the water. Stir well to dissolve the salt completely. Then, gradually add the rinsed rice to the boiling water, stirring gently to prevent clumping.

Cook the Rice

Allow the rice to return to a boil. Once boiling, reduce the heat to low and cover the pot with a lid. Let the rice simmer for about 18-20 minutes, or until the rice is tender and most of the water has been absorbed.

Add Butter

Once the rice is cooked, remove the pot from heat. Add 1 cup of butter to the rice and gently fluff the rice with a fork to incorporate the butter and separate the grains.

Let It Rest

Cover the pot again and let the rice rest for another 5 minutes. This helps to enhance the texture and flavor of the rice.

Serve

After resting, fluff the rice one more time and serve warm. This recipe serves approximately 40 people.
