Prepare the Crust

In a large bowl, mix together flour, cornmeal, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Make the Filling

In a medium bowl, combine diced peaches, sugar, lemon juice, cinnamon, and cornstarch. Stir until well combined and let sit for 10 minutes.

Assemble the Hand Pies

Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8-inch thick. Cut into circles (about 5 inches in diameter). Place a tablespoon of filling in the center of each circle, fold over, and crimp the edges to seal. Cut a small slit in the top of each pie.

Bake the Hand Pies

Place the hand pies on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown. Let cool.

Peach Ice Cream

Prepare the Ice Cream

In a mixing bowl, whisk together pureed peaches, heavy cream, milk, sugar, vanilla extract, and salt until well combined. Pour mixture into an ice cream maker and churn according to manufacturer's instructions. Transfer to an airtight container and freeze for at least 4 hours before serving.
