Prepare the Brussels Sprouts

Trim the ends of the Brussels sprouts and remove any yellow leaves. Cut them in half.

Cook the Pancetta

In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes. Remove and set aside.

Sauté the Brussels Sprouts

In the same skillet, add the Brussels sprouts cut side down. Sauté for about 5 minutes until browned. Stir in the chopped dates and cook for another 3-4 minutes until the Brussels sprouts are tender. Season with salt and pepper.

Make the Goat Cheese Foam

In a small saucepan, heat the heavy cream over medium heat until it's warm but not boiling. Remove from heat and whisk in the goat cheese until smooth and creamy. If desired, blend for a smoother texture.

Combine and Serve

Plate the sautéed Brussels sprouts, sprinkle the crispy pancetta on top, and drizzle with the goat cheese foam. Serve immediately.
