Method

Flatbread Preparation

1

Prepare the Flatbread

Brush the flatbread pieces with olive oil on both sides. Sprinkle garlic powder and salt evenly over the surface.

2

Grill the Flatbread

Preheat a grill or grill pan over medium heat. Grill the flatbread for about 2-3 minutes on each side until they are warm and have grill marks.

Roasted Tomatoes

3

Prepare the Tomatoes

Preheat the oven to 400°F (200°C). In a mixing bowl, combine cherry tomatoes, balsamic vinegar, olive oil, salt, and black pepper. Toss to coat.

4

Roast the Tomatoes

Spread the tomatoes on a baking sheet in a single layer. Roast in the oven for 20-25 minutes until they are blistered and caramelized.

Assembly

5

Spread the Base

Once the flatbreads are grilled, spread a generous layer of hummus on each piece.

6

Add the Toppings

Spoon the sunflower pesto over the hummus, followed by a handful of roasted tomatoes, black olives, and fresh basil leaves.

7

Serve

Cut the flatbreads into wedges and serve immediately, enjoying the fresh flavors!
