Prepare tools and glass

Chill an Old Fashioned (rocks) glass by filling it with ice and setting it aside. Gather a cocktail shaker or mixing glass, jigger, bar spoon, strainer, and a sharp peeler or small knife for the lemon twist.

Build and stir

Discard the ice from the chilled glass. In a mixing glass or shaker filled with fresh ice, combine 2 oz Knob Creek bourbon, 0.5 oz simple syrup, 0.75 oz fresh lemon juice, 2 dashes Angostura bitters and 1 dash orange bitters (if using). Stir briskly for 20–30 seconds until well chilled and slightly diluted — about 15% dilution is typical for spirit-forward stirred drinks.

Strain and serve

Place 2–3 large ice cubes into the chilled Old Fashioned glass. Strain the mixed cocktail over the ice using a Hawthorne or julep strainer.

Garnish

Express the oils of a lemon twist over the surface of the drink by holding the twist skin-side down and giving it a firm snap over the glass, then rub the twist around the rim and drop it into the drink. Optionally add a Luxardo cherry on a pick for a touch of sweetness and visual appeal.

Serve

Present immediately. Taste and, if desired, adjust sweetness on subsequent pours by increasing or decreasing the simple syrup by 0.25 oz.
