Season the Steaks

In a small bowl, mix together salt, black pepper, and garlic powder. Rub the olive oil over the ribeye steaks and then generously coat both sides with the spice mixture.

Prepare the Grill

Prepare your charcoal grill by lighting the charcoal and allowing it to burn until covered in white ash. This should take about 20-30 minutes.

Grill the Steaks

Place the seasoned steaks on the grill over direct heat. Cook for about 4-5 minutes on each side for medium-rare, or until they reach an internal temperature of 130°F (54°C).

Add Fresh Rosemary

During the last minute of grilling, add the fresh rosemary sprigs on the grill to infuse the steaks with additional flavor.

Serving

Rest and Slice

Remove the steaks from the grill and let them rest for 5-10 minutes to retain their juices. Slice the steaks into strips and serve in cast iron skillets.

Serve the steaks with a selection of sauces including chimichurri, BBQ, and horseradish sauce on the side.
