Experience the refreshing taste of Hollow Hill Raspberry Ale, a delightful brew that combines the sweetness of ripe raspberries with the crisp, clean finish of a well-crafted ale. Perfectly balanced, this vibrant drink offers a burst of fruity flavor that dances on your palate, making it an irresistible choice for warm evenings or casual gatherings. In a large brew kettle, heat 6 liters of water to about 70°C (158°F). Add the pale malt, crystal malt, and wheat malt. Stir well and maintain the temperature for 60 minutes.

Mashing

After mashing, sparge the grains with additional hot water to extract the sugars. Collect the wort in the brew kettle.

Sparging

Bring the wort to a boil and add Cascade hops. Boil for 30 minutes, then add Fuggle hops and boil for another 15 minutes.

Boiling

Cool the wort quickly using a wort chiller or an ice bath to around 20°C (68°F).

Cooling

Transfer the cooled wort to a fermentation vessel. Add the ale yeast and seal with an airlock. Ferment for 1-2 weeks at room temperature.

Fermentation

Mash the fresh raspberries and add them to the fermentation vessel during the last 3 days of fermentation.

Raspberry Addition

After fermentation is complete, mix sugar with a small amount of water to create a simple syrup and add it to the bottling bucket. Transfer the beer to the bottling bucket and bottle the ale.

Bottling

Allow the bottles to carbonate at room temperature for about 1-2 weeks before refrigerating.
