Prepare produce

Wash the Korean cucumber, bitter melon, mint, and cilantro. Trim cucumber ends; reserve 1 thin ribbon or wheel for garnish. Cut the remaining cucumber into 1/2-inch chunks. Halve the bitter melon lengthwise, scrape out seeds with a spoon, and thinly slice the flesh. If you want milder bitterness, briefly blanch the slices in boiling water for 30 seconds then shock in ice water and drain; otherwise use raw for more bite.

Place cucumber chunks, bitter melon slices, mint leaves, cilantro leaves, sliced ginger, and optional green chili into a sturdy jar or bowl. Add the lime juice, simple syrup (or agave), honey (if using), a pinch of salt, and a pinch of freshly ground black pepper.

Muddle the mixture gently with a muddler or the back of a spoon 8–12 times to release juices and aromas—press enough to crush cucumber and bruise herbs but not pulverize into puree. Let the mixture macerate for 5–10 minutes at room temperature to marry flavors.

Straining, mixing & chilling

Set a fine-mesh sieve over a pitcher or mixing bowl. Pour the macerated mixture through the sieve, using the back of a spoon to press out as much liquid as possible. Reserve the strained solids (they can be used in a smoothie or discarded).

Add the cold-brew green tea (if using) to the strained concentrate and stir to combine. Taste and adjust sweetness or acidity: add up to 1 tsp more simple syrup or 1/2 tsp more lime juice if needed.

Cover the pitcher and chill for at least 10 minutes in the refrigerator if you prefer a cooler tonic, or proceed immediately for a fresher, more aromatic drink.

Assembling the Garden Tonic

Fill a tall glass with ice (about 1 cup). Add approximately 3–4 ounces (90–120 ml) of the cucumber–bitter melon concentrate (measure by eye or spoon) to the glass. This recipe yields a concentrated flavored base; adjust amount per glass for desired intensity.

Top with 8–10 ounces (240–300 ml) of cold sparkling water. Gently stir once to combine, preserving carbonation.

Garnish with the reserved cucumber ribbon/wheel and a mint sprig. Optionally, lightly slap the mint between your palms first to release aroma before garnishing.

Serve immediately. If making multiple servings, keep the concentrate and sparkling water separate and combine just before serving to preserve fizz.
