Clean and prepare

If using whole octopus, rinse and remove beak/eyes and any excess skin. If using frozen tentacles, thaw completely and pat dry. Trim to taco-friendly lengths (2–3 inches).

Simmer to tenderize

In a large pot combine 6 cups water, 1 cup white wine, 2 bay leaves, 1 tablespoon black peppercorns and 2 teaspoons coarse salt. Bring to a gentle simmer. Add the tentacles, reduce heat to low and simmer gently, uncovered, for 40–50 minutes (depending on thickness) until tender when pierced with a knife. Keep an eye to avoid a rolling boil which toughens seafood. Drain and let cool slightly.

Char and flavor

Pat tentacles very dry. In a bowl toss the tentacles with 2 tablespoons olive oil, 1 teaspoon activated charcoal powder (or 1 tsp squid ink) for the blackened goth appearance, 1 teaspoon smoked paprika and 1/2 teaspoon cracked black pepper. Heat a heavy skillet or cast-iron pan over high heat until smoking. Sear tentacles 2–3 minutes per side until deeply charred at edges and warmed through. For extra char, finish on a hot grill for 1–2 minutes per side. Rest 3 minutes, then slice into 1/4–1/2-inch pieces for tacos.

Make the blackberry slaw

In a large bowl combine 2 cups shredded purple cabbage, 1/2 cup thinly sliced red onion, 1/2 cup slightly mashed blackberries, 1 minced jalapeño (seeded if you want less heat) and 1/4 cup chopped cilantro. Toss gently to combine.

Dressing

Whisk together 2 tablespoons lime juice, 1/4 cup mayonnaise, 2 tablespoons Greek yogurt, 1 teaspoon honey and 1/2 teaspoon salt. Taste and adjust sweetness or acidity. Fold the dressing into the cabbage mixture until evenly coated. Let sit 10 minutes to mellow and meld flavors. Sprinkle optional 1/2 teaspoon black lava salt or flaky sea salt over the slaw just before assembly.

Tortillas & Assembly

Warm tortillas

Warm 8 small corn tortillas in a dry skillet over medium-high heat 20–30 seconds per side until pliable and slightly charred. Keep wrapped in a clean towel to stay warm.

Assemble tacos

Lay a warm tortilla flat. Add a generous spoonful (about 2–3 tablespoons) of the blackberry slaw, then arrange 3–4 slices of the charred tentacle pieces. Top with a sprinkle of crumbled queso fresco (about 1 tablespoon per taco), a teaspoon of pickled red onions, and a few microgreens or cilantro. Add a squeeze of lime and a drizzle of hot sauce if desired.

Serve

Serve immediately with extra lime wedges and hot sauce on the side. Present with a dark, theatrical plate or slate for the goth aesthetic.
