Prepare ingredients

Halve the avocados lengthwise, remove the pits, and scoop the flesh into a medium bowl. Finely chop the red onion, seed and finely chop the jalapeño (leave seeds in for more heat), chop the cilantro, and dice and seed the tomato to avoid excess liquid.

Mash avocados

Using a fork or potato masher, mash the avocado to your preferred texture — slightly chunky for traditional guacamole or smoother if desired. Leave some small chunks for texture.

Add seasonings and mix

Immediately add the lime juice and kosher salt to the mashed avocado and mix to combine (the acid helps slow browning). Add black pepper, chopped red onion, jalapeño, cilantro, and diced tomato. Stir gently until evenly distributed.

Adjust seasoning

Taste and adjust seasoning: add more salt, lime juice, or jalapeño for heat. If using, stir in ground cumin and hot sauce sparingly and taste again.

Rest and serve

Let the guacamole sit at room temperature for 10 minutes to allow flavors to meld. Transfer to a serving bowl, garnish with a little extra cilantro and lime wedges. Serve immediately with tortilla chips or use as desired. To store, press plastic wrap directly onto the surface to minimize air contact and refrigerate up to 1 day.
