Blackened Catfish

Prepare the Spice Mix

In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt. Mix well to create a spice blend.

Season the Catfish

Pat the catfish fillets dry with paper towels. Rub the spice blend generously over both sides of each fillet.

Cook the Catfish

Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned catfish fillets and cook for about 4-5 minutes per side, or until the fish is cooked through and has a charred crust.

Cheddar Grits

Boil the Water

In a medium saucepan, bring 4 cups of water to a boil. Add salt.

Cook the Grits

Slowly whisk in the grits. Reduce heat to low and cook, stirring frequently, until thickened (about 20-25 minutes).

Add Cheese and Butter

Once the grits are cooked, remove from heat and stir in cheddar cheese and butter until melted and smooth.

Crab & Corn Salsa

Combine Ingredients

In a medium bowl, combine canned crab meat, corn kernels, diced red onion, diced tomatoes, chopped cilantro, and lime juice. Mix well.

Season

Add salt to taste and stir to combine. Set aside to allow flavors to meld.

Asparagus

Prepare the Asparagus

Trim the woody ends from the asparagus spears. Rinse under cold water.

Cook the Asparagus

In a large skillet, heat olive oil over medium heat. Add asparagus and season with salt. Cook for 5-7 minutes, turning occasionally, until tender and bright green.

Chipotle Aioli

Mix the Aioli

In a small bowl, combine mayonnaise, minced chipotle peppers, lime juice, and minced garlic. Stir until smooth.

Add salt to taste and mix well. Set aside until ready to serve.
