Make cucumber juice (if needed)
If you don't have bottled cucumber juice, peel and roughly chop half a small cucumber (about 2–3 oz), then pulse in a blender and strain through a fine mesh sieve or cheesecloth to yield about 0.5 oz of fresh cucumber juice. Discard solids.
Build and shake
In a cocktail shaker, combine 2 oz blanco tequila, 0.5 oz dry vermouth, 0.25 oz Green Chartreuse, 0.5 oz fresh lime juice, 0.25 oz agave syrup, 0.5 oz cucumber juice and 2 dashes of celery bitters. Fill the shaker with ice (about 1 cup). Shake vigorously for 12–15 seconds until very cold and the shaker is frosted.
Strain and serve
Double-strain the cocktail into the chilled, salted coupe using a Hawthorne and fine mesh strainer to remove ice shards and any cucumber solids.
Garnish
Float a thin cucumber wheel and a small lime wheel on the surface of the drink. Optionally express a lime peel over the top and discard or tuck the peel alongside the garnish.
Serve immediately and enjoy. This recipe yields one cocktail (serving for 1). The estimated total time including chilling and making cucumber juice is about 12 minutes.
