Preparation Steps

1

Melt the Chocolate

Chop the dark chocolate into small pieces and place it in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 2-3 minutes to melt the chocolate.

2

Combine Sugar and Egg Yolks

In a mixing bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and slightly thickened, about 3-4 minutes.

3

Mix Chocolate and Egg Mixture

Once the chocolate has melted and is smooth, slowly whisk it into the egg yolk mixture until fully combined. Add the vanilla extract and a pinch of sea salt, stirring well.

4

Prepare the Butter

In a small saucepan, melt the butter over low heat. Once melted, remove from heat and allow it to cool slightly. Gradually stir the melted butter into the chocolate mixture until well incorporated.

5

Chill the Mixture

Pour the chocolate mixture into serving dishes or ramekins. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

6

Serve

Once the chocolate has set, remove from the refrigerator and serve chilled. You can top with whipped cream or fresh berries if desired.
