Place the veal chops in a large resealable bag or shallow dish and pour the marinade over them. Ensure that each chop is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

While the veal is marinating, preheat your oven to 400°F (200°C). In a large bowl, toss the potato wedges with olive oil, salt, and paprika until evenly coated.

Spread the seasoned potato wedges on a baking sheet in a single layer. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy, turning halfway through.
