Seafood Avocado Cocktail

This could very well be the ultimate seafood cocktail, served with a light-bodied sauce instead of the typical red glop. With lots of vegetables to balance the chunks of shrimp and crab, it can be served as a salad as well as a palate- and eye-pleasing appetizer.

Method

Preparation of Seafood

1

Prepare the Fish and Shrimp

Cut the fresh white fish into small cubes and place it in a large mixing bowl. Add the shrimp, ensuring they are chopped into bite-sized pieces.

2

Marinate in Lime Juice

Pour the fresh lime juice over the fish and shrimp mixture. Cover the bowl with plastic wrap and refrigerate for about 30 minutes, or until the seafood is opaque and fully 'cooked' by the lime juice.

Mixing Ingredients

3

Add Vegetables and Seasoning

After the seafood has marinated, remove it from the refrigerator. Add the finely chopped red onion, chopped cilantro, grated carrot, salt, black pepper, and hot sauce (if using) to the bowl. Mix gently to combine all ingredients well.

Assembly

4

Assemble the Tostadas

Take the corn tostadas and spoon the ceviche mixture generously over each tostada. Make sure to distribute the seafood and vegetables evenly.

5

Serve Immediately

Serve the ceviche tostadas immediately after assembly, garnished with additional cilantro if desired. Enjoy!
