Prepare the Shrimp Filling

Cook the Shrimp

In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp, chili powder, salt, and black pepper. Cook until the shrimp turn pink and opaque, about 5-7 minutes. Remove from heat and set aside.

Make the Slaw

Combine Ingredients

In a large bowl, combine the shredded cabbage, grated carrot, lime juice, chopped cilantro, and salt. Toss well to combine and set aside to let the flavors meld.

Prepare the Pico de Gallo

Mix Pico de Gallo Ingredients

In a bowl, combine the diced tomatoes, diced onion, minced jalapeño, chopped cilantro, lime juice, and salt. Mix well and set aside.

Assemble the Quesadilla

Layer and Cook

Heat a non-stick skillet over medium heat. Place one tortilla on the skillet, then layer half of the shredded Monterey Jack cheese, followed by half of the cooked shrimp mixture. Top with another tortilla. Cook for 3-4 minutes on each side until golden brown and the cheese is melted. Repeat with remaining ingredients.

Cut the quesadillas into wedges. Serve with slaw, pico de gallo, and sour cream on the side.
