Prepare the Soybeans

Rinse the dry soybeans under cold water and soak them in a large bowl with enough water to cover them for at least 8 hours or overnight.

Cook the Soybeans

Drain and rinse the soaked soybeans. In a large pot, add the soybeans and 6 cups of fresh water. Bring to a boil, then reduce the heat and simmer for about 1 hour or until the soybeans are tender.

Sauté the Vegetables

In a separate pan, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened.

Combine Ingredients

Once the soybeans are cooked, add the sautéed vegetables to the pot with the soybeans. Pour in the vegetable broth, and season with salt, black pepper, thyme, and bay leaf. Stir well.

Simmer the Soup

Bring the mixture to a gentle boil, then reduce the heat and let it simmer for another 20-30 minutes to let the flavors meld together.

Finish the Soup

Remove the bay leaf, stir in the lemon juice, and adjust seasoning to taste before serving.
