Salmon Burger
Prepare the Salmon Mixture
In a large bowl, combine the diced Atlantic salmon fillets, bread crumbs, egg, Dijon mustard, chopped dill, lemon juice, salt, and black pepper. Mix until well combined.
Form the Patties
Shape the mixture into 4 equal-sized patties, ensuring they are compact to hold together while grilling.
Toast the Rolls
While the patties are grilling, cut the artisan rolls in half and toast them on the grill for 1-2 minutes until lightly golden.
Roasted Garlic Aioli
Roast the Garlic
Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for 20-25 minutes until soft and golden.
Make the Aioli
Once the garlic is cool, squeeze the cloves into a bowl and mash them. Mix in the mayonnaise, lemon juice, salt, and black pepper until smooth and well combined.
Crispy Shoestring Fries
Fry the Potatoes
Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Drain the soaked fries and pat them dry with paper towels. Fry in batches for about 3-4 minutes until golden and crispy. Remove and drain on paper towels. Season with salt.
