Preparation of the Shrimp
Prepare the Shrimp
In a bowl, combine the cornstarch, flour, salt, black pepper, and Cajun seasoning. In another bowl, place the beaten egg. Dip each shrimp first in the egg, then dredge in the flour mixture until fully coated.
Fry the Shrimp
Heat the vegetable oil in a deep frying pan over medium-high heat. Once hot, carefully add the breaded shrimp in batches and fry until golden brown and cooked through, about 2-3 minutes per side. Remove and place on a paper towel-lined plate to drain excess oil.
Assembling the Po' Boy
Assemble the Po' Boy
Spread a generous amount of Cajun remoulade on the bottom half of each toasted brioche roll. Add a layer of lettuce, followed by sliced tomatoes, and then top with the crispy fried shrimp. Drizzle more remoulade on top if desired, and close the sandwich with the top half of the roll.
