Method

Roasting the Chicken

Prepare the Chicken

Preheat your oven to 425°F (220°C). In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the chicken halves.

Roast the Chicken

Place the chicken halves in a roasting pan, skin-side up. Roast in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 165°F (75°C).

Making Cheddar Mashed Potatoes

Cook the Potatoes

In a large pot, add the cubed potatoes and cover with cold water. Add salt and bring to a boil. Cook until tender, about 15-20 minutes. Drain and return to the pot.

Mash and Add Cheese

Add butter, milk, shredded cheddar cheese, salt, and black pepper to the drained potatoes. Mash until smooth and creamy.

Sautéing the Sausage Greens

Cook the Sausage

In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Add sausage and cook until browned.

Add Greens

Stir in the chopped collard greens or kale, minced garlic, salt, and black pepper. Cook until the greens are wilted and tender, about 5-7 minutes.

Making the Pan Jus

Prepare the Jus

In the same roasting pan used for the chicken, add white wine and chicken stock. Scrape up any browned bits from the bottom of the pan. Stir in fresh thyme, salt, and pepper. Simmer on the stovetop until slightly reduced.
