Cooking Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté the Sausage
In a large skillet over medium heat, add the Italian sausage. Cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
Blister the Tomatoes and Caramelize the Onions
In the same skillet, add 2 tablespoons of olive oil and the sliced onion. Cook over medium-low heat, stirring occasionally, until the onions are caramelized, about 10-15 minutes. Add the cherry tomatoes and cook until blistered, about 5 minutes.
Combine Ingredients
Return the sausage to the skillet with the onions and tomatoes. Pour in the white wine and add the crushed red pepper flakes. Cook for an additional 3-5 minutes until the wine reduces slightly.
Serve
Serve warm, garnished with extra arugula or additional crushed red pepper if desired.
