Preparation

Prepare the Salmon

In a small saucepan, combine pomegranate juice and honey. Bring to a simmer over medium heat and cook until reduced by half and syrupy, about 10 minutes. Season salmon fillets with salt and black pepper.

Seared Salmon

Heat olive oil in a skillet over medium-high heat. Add the salmon fillets skin-side down and sear for 4-5 minutes. Flip and brush with pomegranate glaze, then sear for an additional 3-4 minutes until cooked to your liking.

Vegetables & Orzo

Cook the Sunchokes and Tomatoes

Boil or steam sunchokes until tender, about 10-15 minutes. In a separate pan, sauté cherry tomatoes and grilled artichokes until heated through.

Cook the Orzo

Cook orzo pasta according to package instructions. Drain and mix with fresh herbs, lemon juice, salt, and black pepper.

Assembly

Plate the Dish

On a plate, layer the sunchokes, and top with sautéed tomatoes and grilled artichokes. Place the seared salmon on top and drizzle with remaining pomegranate glaze. Serve herb orzo on the side.
