Chill glass
Place a champagne flute or coupe in the freezer for 5–10 minutes, or fill it with ice water while you prepare the cocktail to ensure it is nicely chilled.
Combine base ingredients
Add Grey Whale Gin (1.5 oz), fresh lemon juice (0.75 oz), and simple syrup (0.5 oz) into a cocktail shaker.
Add ice and shake
Fill the shaker with ice (about 1 cup), secure the lid, and shake vigorously for 10–12 seconds until the outside of the shaker is frosty and well chilled.
Strain
Discard ice or water from the chilled flute. Double-strain the shaken mixture into the chilled flute using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any pulp.
Top with bubbles
Slowly top the drink with chilled Champagne or dry sparkling wine (about 3 oz). Pour gently down the side of the glass so the bubbles integrate without overflowing.
