Cocktail

Blackberry Simple Syrup & Purée (makes ~6 oz syrup + 4 oz purée)

Chile-Arbol Mezcal Infusion (optional if you don't have pre-infused mezcal)

Method

Blackberry Simple Syrup & Purée

Make syrup and purée

Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat. Stir until sugar dissolves and the mixture simmers. Add 8 oz blackberries and cook gently for 6–8 minutes until berries break down and the mixture is fragrant. Remove from heat and let steep 10 minutes.

Strain the mixture through a fine-mesh sieve into a bowl, pressing solids to extract juices. The strained liquid is your blackberry simple syrup. If you want a thicker purée for texture, reserve 3–4 tablespoons of the pressed solids, transfer to a blender or use an immersion blender, and purée until smooth. Stir 1/2 tsp lemon juice into the syrup to brighten. Cool completely before using. Yield: ~6 oz syrup + ~4 oz purée (adjust quantities as needed).

Chile-Arbol Mezcal Infusion (optional)

If you don't have chile-arbol–infused mezcal, make a quick infusion: split 2 dried arbol chiles (lightly shake out most seeds for milder heat) and add them to 4 oz of mezcal in a sealed jar. Let steep at room temperature for 2–6 hours, tasting every hour until desired heat is reached. For a very bold chile note, steep longer (up to 12 hours). Strain out chiles before using. Use 0.5 oz of this infusion per cocktail.

Rim & Build Cocktail

Prepare the glass: pour 1 tablespoon Tajin onto a small plate and mix with 1/2 teaspoon coarse salt (optional). Rub a lime wheel around the rim of a rocks or coupe glass, then dip the rim into the Tajin-salt mixture to coat. Set glass aside.

Add ice to a cocktail shaker (enough to fill it about half to three-quarters full). Pour in 1.5 oz WhistlePig 12 Year rye, 0.5 oz chile-arbol mezcal (or 0.5 oz of your infusion), 1 oz fresh lime juice, 0.75 oz blackberry simple syrup, 0.5 oz blackberry purée, and 0.25 oz orange liqueur (optional).

Dry shake (no ice) for about 10 seconds to incorporate the purée and create texture, then add ice and shake vigorously for 12–15 seconds until well-chilled and slightly frothy.

Double-strain the cocktail through a fine mesh strainer (to remove seeds/pulp) into the prepared glass over fresh ice (or serve neat in coupe if preferred).

Garnish with 2–3 fresh blackberries skewered on a pick and a lime wheel on the rim. Optionally sprinkle a tiny pinch of Tajin on top for aroma.
