Cocktail Preparation

Combine ingredients

Add the Absolut vodka, blue banana liqueur, fresh lime juice, Calpico, and the egg white into a cocktail shaker.

Dry shake

Without ice, seal the shaker and shake vigorously for 15–20 seconds to emulsify the egg white and create a foamy texture.

Wet shake

Open the shaker, add the ice (about 1 cup), reseal and shake hard for 10–15 seconds until the shaker is cold to the touch and well chilled.

Double strain into glass

Double-strain the mixture (use both the shaker strainer and a fine mesh strainer) into a chilled highball or Collins glass filled halfway with fresh ice. This removes ice shards and gives a silky texture.

Finish & Serve

Top with soda

Gently top the cocktail with 2 oz chilled club soda poured slowly down the side of the glass to preserve the foam and create a light fizz.

Garnish

Float a lime wheel or wedge on the foam or place it on the rim. If desired, lightly dust the foam with edible blue sugar or spritz a little lemon-lime soda for extra sparkle.

Serve

Serve immediately while the foam is fresh. Instruct drinker to stir briefly if they prefer the Calpico fully incorporated with the soda.
