Chill glass

Place a martini or coupe glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to thoroughly chill it.

Measure and combine

Add 1.5 oz Beefeater gin, 1.5 oz dry vermouth, and 0.25 oz apple eau-de-vie into a mixing glass or cocktail shaker.

Add ice and stir

Fill the mixing glass with plenty of ice (about 1 cup). Stir gently but steadily for 20–30 seconds until the mixture is well chilled and slightly diluted (the mixing glass should feel cold to the touch).

Prepare glass

If you used ice water to chill the glass, dump it out now. Strain the stirred cocktail through a julep or hawthorne strainer into the chilled martini or coupe glass.

Garnish

Cut a 1-inch strip of grapefruit peel, removing excess pith so the peel is mostly zest. Hold the peel over the served cocktail with the outer (zest) side down and give it a quick twist to express the oils over the surface. Rub the peel lightly around the rim of the glass, then drop the twist into the drink (or rest it on the rim) as garnish.
